No Bake Carrot Cake Bites

Ingredients:

  • 5 carrots

  • 2 tbsp peanut butter

  • 2 tsp maple syrup

  • 3 tsp plant milk

  • 1/2 tsp vanilla extract

  • 1 cup oats

  • 1/2 tbsp hemp, flax and chia seeds (ground)

  • 1 tsp maca powder

  • 1 tsp desiccated coconut

  • 1 tsp coconut oil

Method:

Blend the oats into a flour. Add all dry ingredients and blend them together.

Blend the carrots and strain the juice with a nut milk bag (save the juice for a warm sunny day, and serve it with slices of orange and a little maple syrup).

Melt vegan chocolate and mix it into the mixture. Add the carrot pulp and the rest of the wet ingredients.

Oil a cake pan with coconut oil, and scoop all the mixture into it, pressing down the edges.

Leave it in the fridge for an hour to firm up.

Cut it into small squares, and top each square with desired toppings such as peanut butter, desiccated coconut, vegan honey or any fruit.
